Abstract:
To obtain an emulsifier for a coffee whitener having low viscosity and excellent in dispersibility with coffee and emulsification stability, and to obtain the coffee whitener using the emulsifier.
The emulsifier for the coffee whitener contains (a) a polyoxyethylene sorbitan fatty acid ester and (b) at least one kind selected from a polyglyceryl fatty acid ester, a sorbitan fatty acid ester and a sucrose fatty acid ester.
