Abstract:

To obtain an emulsifier excellent in safety and biodegradability end a food to which the emulsifier is added by subjecting a fatty acid monoglyceride to transfer reaction with saccharides by using glycosyl transferase, etc., having emulsifying ability in the presence of a metal ion.

A fatty acid monoglyceride is subjected to transfer reaction with monosaccharides or di- or poly-saccharides by using a glycosyl transferase or sugar hydrolase in the presence of a metal ion and/or under acidic conditions to afford a glycosyl fatty acid monoglyceride. The glycosyl fatty acid monoglyceride is included to provide the objective emulsifier having emulsifying ability in the presence of calcium ion.
