To obtain acidic juice-containing whole milk jelly which is not solidified and separated by an acidic aqueous solution in which milk fat in whole milk is mixed and capable of retaining homogeneous sourness in non-fermentable state and provide an apparatus for producing the jelly.
This apparatus is equipped with a dissolving aqueous solution tank 10 for mixing water with a thickening and stabilizing agent and a solidifying agent, heat-agitating the mixture and uniformly dissolving each agent, a whole milk agitating tank 20 for mixing an aqueous solution from the dissolving aqueous solution tank 10 with a taste-adjusting agent and producing whole milk mixed solution by heating and agitating, an emulsion-producing tank 30 for dropping and mixing an acidic aqueous solution with the whole milk mixed solution and producing emulsion by heating and agitating, an emulsion-jellying device 40 for storing the emulsion and jellying the emulsion by heating and cooling and a jelly-freezing device 50 for freezing the jellied material by rapid cooling. The whole milk is mixed with the acidic aqueous solution together with Locust bean gum, agar, a taste adjusting agent, etc., and the mixture is formed into jelly having homogeneous state in non-fermentable state or frozen jelly.
