Abstract:

To obtain an antioxidant which can be easily added to an aqueous medium and an emulsion by mixing a vegetable substance with a 2-6C alkylene glycol and pressurizing the mixture.

A vegetable substance having a total water content of 5-30 wt.% and selected among spices and vegetables each containing an antioxidant is mixed with a 2-6C alkylene glycol at 70-100°C to obtain a mixture. This mixture is pressurized under a pressure of 40 bars or higher to extract the antioxidant.
