Abstract:
PURPOSE: To enable the extraction of spicy components at a low temperature in a short time and to obtain a sauce having strong flavor and high quality, by extracting the spicy component of spices with an acetic acid solution having a specific concentration in the production of sauce.
CONSTITUTION: A spice (e.g. pepper) is added with a solution of acetic acid having a concentration of ≥15% and the spicy component (e.g. piperine) is extracted under stirring usually at normal temperature. The extracted liquid is added to the stock liquid of sauce to obtain the objective sauce.
