Abstract:
PROBLEM TO BE SOLVED: To provide a flavor-improving agent that effectively suppresses off-taste or off-smell of food.SOLUTION: Provided is a flavor-improving agent containing a resistant starch-rich starch satisfying the following conditions (a), (b), (c) and (d) as an active ingredient: (a) the resistant starch content according to the resistant starch measurement method of AOAC official method 2002.02 is 60% or more; (b) the molecular weight peak is 6×10or more and 4×10or less; (c) the molecular weight dispersion degree is 1.5 or more and 6.0 or less; and (d) the gelatinization enthalpy at 50°C to 130°C by differential scanning calorimetry is 10 J/g or less.SELECTED DRAWING: None
