Abstract:

PROBLEM TO BE SOLVED: To provide both a method capable of simply evaluating the freshness, quality, etc., of a food without destroying or pre-processing the food and a device of a low manufacturing cost capable of implementing the method.
SOLUTION: In the food condition evaluating method, the self -fluorescence of food or the fluorescence intensity of a fluorescent probe coexistent in the food is measured, and the condition of the food is evaluated with the intensity of the fluorescence as an index. The food condition evaluating device is provided with an exciting light source, a food storage part to hold a food sample at a location to be irradiated with exciting light from the exciting light source, and a florescence detecting part to detect fluorescence emitted from the food sample.
