Abstract:

To provide food which contains foam-like material and in which the foam-like material is stable, and to provide a simple method for producing the food.

There is provided a food having a multiple-phase structure, and at least one phase of the multiple-phase structure includes a foam-like material, and the foam-like material contains fermented cellulose. There is further provided a method for producing the food. The foam-like material is produced by addition of the fermented cellulose and therefore the pneumatic condition of the foam-like material is maintained, so that the food having a clear interface of a gelatinized material can be produced.
