Abstract:

To provide a food having at least two phases of sol and gel where the boundary of respective phases of is sharp, and to provide a method for producing the food.

A food has at least two phases of sol and gel. The food has sharp boundaries of the respective phases owing to addition of low methoxyl pectin and calcium, deacylation gellan gum and calcium, or fermented cellulose to at least one phase of the two phases. A method for producing the food is provided.
