Abstract:

PURPOSE: To obtain a frozen food capable of readily handling after defrosting, free from deforming and having good appearance and flavor after heat cooking.

CONSTITUTION: The frozen food is produced by adding the gelling agent to a dough material consisting essentially of wheat, oils and fats, egg and water to prepare the dough and shaping the dough and freezing the shaped dough.
