Abstract:
To provide soybean milk that has a reduced grassy smell and excellent stability to cause no precipitation or no flocculation in spite of containing a gallate-type catechin and soybean protein and a method for producing the same.
The soybean milk contains a gallate-type catechin, contains 0.6-5.0 wt.% of the gallate-type catechin based on the amount of raw material soybean and is obtained by mixing the gallate-type catechin with the raw material soybean at a production stage before the raw material soybean is ground.
