Abstract:
To provide a method for producing a tofu that has a reduced grassy smell and a smooth texture free from rough touch in spite of containing a gallate-type catechin and soybean protein.
The method for producing a gallate-type catechin-containing tofu is characterized in that the amount of the gallate-type catechin is 0.6-5.0 wt.% based on raw material soybean, and n that soybean milk, obtained by mixing the gallate-type catechin with raw material soybean at a production stage before the raw material soybean is ground, is used as a raw material.
