Abstract:

To provide gel-like food containing agar as a gelling agent, wherein elasticity is reduced without weakening rupture stress so as to have light crispness without spoiling gel property to make the food have fruity feeling or the like.

The gel-like food comprises agar, xanthan gum and a component (A): wherein the component (A) comprises galactomannan and/or glucomannan, and the component containing at least the xanthan gum is the one homogenized with a high-pressure homogenizing machine.
