Abstract:

To produce a flavor component-holding powdered milk holding the flavor component for a long period of time not causing the deterioration and change of the quality and having high preservability.

This flavor component-holding powdered milk is obtained by heating a milk-originated protein solution (defatted milk, defatted concentrated milk, defatted recombined milk, sodium casein solution, whey solution, WPC solution, etc.), having a controlled solid content of 0.5-30% at 50-100°C, extracting black tea, coffee, powdered green tea, Japanese green tea or oolong tea with the heated protein solution to allow the milk protein to adsorb the flavor component, drying the extract solution, and subsequently pulverizing the dried product.
