Abstract:
PURPOSE: To provide the subject production unit capable of controlling the water flow in a water-chilling type condenser and of suppressing the amount of water to be used to a minimum.
CONSTITUTION: In this production unit having a cylinder for producing ice confectionery and a vessel for storing ice confectionery stock, equipped with a freezing system made up of a compressor 14 to chill both the cylinder and vessel, a water-chilling condenser 12 and respective chillers 3, 7 for the cylinder and vessel, and designed to enable selection between such a freezing cycle as to chill both the cylinder 4 and vessel 2 through heat release at the condenser 12 by a four-way valve 15 constituting a reversible cycle in the freezing system to produce ice confectionery and chill its stock and a second freezing cycle to absorb heat at the condenser 12, heat both the cylinder 4 and vessel 2 to conduct heat sterilization of the stock, there are a chilling water channel 23 for the condenser 12 and a water-saving valve 26 set up at the channel 23 and conducting such a control as to detect the suction side pressure or temperature at the condenser 12 and gradually decrease the water flow during heat sterilization.
