Abstract:
PROBLEM TO BE SOLVED: To simply sharpen a kitchen knife by laying a soft rubber plate or a thick cloth piece on a sharpening plate with a hook, and using the hook to fix a kitchen knife to be sharpened by a presser. SOLUTION: A kitchen knife, the cutting edge of which wears away, is placed on a sharpening plate 6 with a hook. The tip of a presser 4 is inserted below the hook 2, and a part of the kitchen knife to be sharpened is put out and pressed. A grip part is bound by a rubber string 9. The knife is fixed by a wing nut 10. Next a grinding stone 12 is held and moved forward and backward along a guide 11 of the presser 4 to sharpen the part of the knife edge of the kitchen knife to be sharpened. Subsequently, the kitchen knife is reversed to sharpen the back side thereof along the opposite guide 11. For edging, the presser 4 is loosened to fix the knife edge of the kitchen knife 5 in such a manner as to be a little projected over the sharpening plate, and the back part of the presser 4 is taken as a starting point to perform edging at an angle of 30 degrees of the blade in the flat surface of the grinding stone 12 lightly from both the surface and the back toward the knife edge.
