Abstract:
PURPOSE: To provide the title lactic bacteria high in mannitol productivity, capable of producing mannitol in a short time even at high substrate concentration and to provide mannitol using said bacteria.
CONSTITUTION: The objective lactic bacteria, Lactobacillus sp. BOO1 (FERM P-3158) which is a strain belonging to Lactobacillus and capable of producing both lactic acid and acetic acid and also highly capable of producing mannitol, and the method of producing mannitol using said Lactobacillus sp. BOO1.
