Abstract:

To provide a lactoferrin composition that has good heat resistance in a broad pH range even in high-temperature treatment at 90°C or higher and retort sterilization treatment at 120°C or higher and is mixed with raw materials to be usually used for various kinds of food and drink, feed and medicines without deactivating LFs.

The lactoferrin composition containing lactoferrins and at least one stabilizer of glycerol fatty acid ester, casein sodium and lecithin has much improved heat resistance of the lactoferrins. The lactoferrin composition and the food and drink, feed and medicines containing the composition can be heat-treated at 90°C or higher without deactivating lactoferrins.
