Abstract:
PROBLEM TO BE SOLVED: To provide lipid-rich microalgal flour food compositions.SOLUTION: Algal flour and algal biomass are disclosed. Food compositions comprising algal biomass or algal flour with a high lipid content are disclosed. In a preferred embodiment, for example, there is provided a food composition comprising: a. algal flour comprising more than about 20% by dry weight triglyceride oil; b. at least one additional ingredient; and c. gas; where the food composition comprises a continuous phase and a discontinuous gas phase, and where the percent of the volume of the food contributed by the gas is between about 1% and about 50%.SELECTED DRAWING: None
