Abstract:
PROBLEM TO BE SOLVED: To produce a low fat process cheese having strong taste, providing dense flavor, and having soft and smooth structure.
SOLUTION: This low fat process having ≤20 wt.% fat content, ≤3 kg hardness and ≤2 mm brittleness in a cheese-compression test, and smooth structure is obtained by adding 0.5-5 wt.% melting salt to a raw material cheese having ≤20 wt.% fat content and emulsifying the obtained mixture by heating the obtained mixture to ≥110°C.
