Abstract:

To provide the manufacture of opened and dried fish which has soft meat and stays fresh for a long time without using an antioxidant.

For a conventional process for dipping opened and dried fish in salt water, mixed liquid of salt water and a green tea decoction is used. At this time, the mixed liquid consists preferably of the salt water and green tea decoction preferably in 100:20 proportion, one of high-quality green tea, green tea of middle grade, powdered tea, coarse tea, and boiled tea is used, and the green tea decoction is obtained preferably by putting 2-3kg green tea in 100kg hot water.
