Abstract:
PURPOSE: To manufacture stable W/O type emulsion easily by adding a material composed of polymerized castor oil fatty acid polyglycelin ester and powder of concentrated milk serum protein to an oily substance and emulsifying the resulting product.
CONSTITUTION: In manufacturing water-in-oil type emulsion, a material composed of 95W50wt% polymerized castor oil fatty acid polyglycelin ester and 5W 50wt% powder of concentrated milk serum protein is added to an oily substance and the resulting product is emulsified. W/O type emulsion stable against pH and salts is obtained and widely usable in food and cosmetic industries.
