Abstract:
PROBLEM TO BE SOLVED: To provide a manufacturing method of a processed meat food having a soft texture, which is easy to eat for elderly having weak chewing force, even with a high content of meat material.SOLUTION: The manufacturing method includes a step of containing semi-heated meat produced by heating raw material meat until just before solidification. The semi-heated meat is thinly sliced and contained in a casing so as to be formed into a predetermined shape, which is further heated so that a processed meat food can be manufactured. Alternatively, the semi-heated meat may be contained in fragmented meat salted in advance and then thinly sliced, so that a processed meat food having a soft and smooth texture can be manufactured with a further improved taste.
