Abstract:
PURPOSE: To provide a method to measure the concn. of a component in food by non-destructive quantitative analysis.
CONSTITUTION: The absorbancy in the vicinity of a specific absorption wave of water and that of an objective aq. soln. are measured by an infrared absorption method to calculate absorbancy A per each mol concn. while the absorbancy B per the same mol concn. of an ideal aq. soln., for example, a glucose aq. soln. is calculated and A/B is calculated to obtain the activity coefficient of an aq. soln. of an objective substance and, if necessary, the concn. of the aq. soln. is measured according to a correlational expression of the activity coefficient and mol concn. of the ideal aq. soln. As a result, the activity coefficient of a non-ideal aq. soln. can be easily measured and the obtained activity coefficient is used to make it possible to measure the concn. of the objective substance in the aq. soln., for example, the concn. of monosaccharide or disaccharide.
