PURPOSE: To improve the production capacity of a meat kneader by forming many fine grooves in the contact surface of the lower contact member of the kneader in which the upper and lower contact members are moved relatively to each other, depositing the supplied raw material on the upper contact surface and kneading the meat.

CONSTITUTION: A contact member 16 having a high-hardness flat contact surface, a contact member 37 having a high-hardness, flat and narrow contact surface 47 on the upper surface are provided, both contact surfaces 22 and 47 are pressed on each other, and the lower contact member 16 is moved relatively to the upper contact member 37. In this case, many grooves are formed in the contact surface 22 of the lower contact member 16. Consequently, the raw material from an inlet 45 is forced into the fine grooves, deposited by viscosity when in contact with the contact surface 47, discharged and kneaded, and the production capacity is remarkably increased.
