The high temperature bean curd 4 produced in a bean-curd production process is supplied to a vacuum chamber 14. Then the bean curd 4 is sent while the chamber is evacuated, water is evaporated from the bean curd 4, the bean curd 4 is cooled by the heat of evaporation. In other words, dewatering and self-cooling are executed to the bean curd 4. The cooled bean curd 4 is collected/stored in a hopper 24 and packed in a container to be sent to a drying factory by a truck 7. The bean curd 4, since it is cooled, is prevented from being putrefied during transportation.
