Abstract:
To provide a method for three-dimensional molding of food products to be formed into a desired shape such as complex shape or hollow shape from starch powder as a raw material.SOLUTION: The method for three-dimensional molding of food products from starch powder as a raw material includes steps of: blending starch powder with water to give a blend of starch powder and water; irradiating a part of the blend with a laser beam to form swelled starch granules containing starch granules of the starch powder having been swelled by the water, gelatinizing the swelled starch granules to form gelatinized starch, gelating the gelatinized starch granules to give gelated starch; and taking the gelated starch out from the blend. The laser beam irradiation step involves irradiating the blend with the laser beam in a predetermined pattern based on a three-dimensional shape of a food product.SELECTED DRAWING: Figure 4
