To produce a dried bacterial cellulose which can show dispersibility, settleability, solution viscosity, etc., equivalent to those before being dried when it is brought again into a wet state by mixing an aqueous suspension of a bacterial cellulose with the third component except bacterial cellulose and water and dehydrating and drying the resulting mixture.
An aqueous suspension of a bacterial cellulose is mixed with the third component except bacterial cellulose and water, and the resulting mixture is dehydrated and dried. Examples of hydrophilic liquids used as the third component include glycerol, ethylene glycol dimethyl sulfoxide, dimethylformamide, surfactants, lactic acid, gluconic acid, delta-gluconolactone and a mixture thereof. Among them, glycerol is desirable. Examples of hydrophilic solids which can be used as the third component include water-soluble substances such as water-soluble low-molecular compounds and water-soluble polymers, water-insoluble substances and difficultly water-soluble substances.
