Abstract:

To provide a starch product dispersible in hot or cold water and having swelling viscosity in a hot or cold state.

This process for preparing a physically modified starch product comprises the steps of: introducing a starting starch and optionally a starting material contg. gum and/or a surfactant, and additive water in an amt. large enough to increase the total moisture content to a moisture content of about 18 to about 45wt.% into an extruder provided with a die plate; and extruding the starting material and water at a die plate temp. of about 140°F to about 285°F and a die plate pressure of about 200 to about 2,500psig.
