To suppress generation of ethylene through cooling, dehumidification, and drying without raising the temperature of the received unhulled rice, and to keep the taste by removing the generated ethylene.
In the drying method, the temperature of the unhulled rice is dropped to about 14°C through the rapid cooling and dehumidifying operation by fully operating a refrigerating machine, a dehumidifier, and a differential pressure fan until the water content of the received unhulled rice reaches about 16%, and then, the operation of the refrigerating machine is stopped, the temperature of the unhulled rice is raised to about 20°C through the dehumidifying operation by the dehumidifier and the differential pressure fan, and the water content is dropped to about 15% and the unhulled rice is stored. An ethylene cut machine is operated to remove ethylene to be generated from the unhulled rice during the dehumidification and storage.
