Abstract:
PROBLEM TO BE SOLVED: To provide a sweetness enhancing agent, including the use of a sweetener combined with other sweeteners having a concentration above a threshold value at a concentration in a range of below the threshold value to the vicinity of the threshold value.SOLUTION: There is provided an agent which, when the agent is mixed with a sweet material which is known or decided in advance, having density equal to or more than a sweetness threshold value at a concentration in a range of below the sweetness threshold value to the vicinity of the sweetness threshold value, additively enhances the sweetness of the mixture of the sweet material which is known or decided in advance and the agent enhanced compared with sweetness of mixture including only the sweet material or including only the agent. The agent can be identified by comparing a signal generated by an activity assay of a taste receptor under the presence of the agent and a signal generated by the activity assay of the taste receptor under absence of the agent. The activity assay of the taste receptor comprises identifying agents coupling with a membrane penetration domain in the taste receptor while excluding agents coupling with a venus fly trap domain in the taste receptor.
