Abstract:

To provide a method for keeping freshness of strawberry by which after ripening of picked strawberry is put off in broad-area distribution, to keep the freshness of the strawberry, so as to widely supply consumers with moderately ripened fruit whose quality is maintained.

The method for keeping freshness of strawberry includes housing strawberry and an allyl isothiocyanate gas generating agent in an air-permeable container so that the allyl isothiocyanate concentration in the container is 0.2-4 ppm (volume ratio) and storing the strawberry at -1 to 10C.
