Abstract:
To provide a method for easily manufacturing an α-starch having desired α-degree.
The method for manufacturing the α-starch comprises making a thin layer having not more than 20 mm of starch raw material having moisture content of 6-25 wt.% and cooking the thin layer in the state until desired α-degree is obtained.
