Abstract:
To provide a method for production by which an aromatic aldehyde can efficiently be obtained without using a strong base, an acid or a heavy metal and to provide an enzyme used for the method for production.
The method for producing the aromatic aldehyde comprises a step of bringing a PLP (pyridoxal phosphate)-dependent aromatic decarboxylase into contact with an aromatic amino acid in the presence of the PLP and in the absence of an amine oxidase. The PLP-dependent aromatic decarboxylase preferably has amino acid sequences represented by at least one of sequences composed of a plurality of specific sequences. The aromatic amino acid is composed of phenylalanine, tyrosine and tryptophan.
