Abstract:

To provide a method for producing caramel, elastic like rice cake when put in the mouth, not stuck to the teeth when put in the mouth, and having high solubility to immediately melt, by containing shark fin extract, agar-agar and gelatine, using no butter to take health and beauty-conscious in consideration.

The caramel contains shark fin extract, agar-agar and gelatine. The method for producing the caramel includes adding shark fin extract to caramel raw material so as to attain the caramel elastic like rice cake, having such high solubility as to immediately melt without being stuck to the teeth when put into the mouth corresponding to the amount of the agar-agar and the gelatine, heating temperature, heating time and the like.
