Abstract:
PROBLEM TO BE SOLVED: To provide defatted soybean milk which is defatted soybean milk prepared by using as the raw material defatted soybeans obtained by defatting soybeans with an organic solvent, gives no feeling of green smell unlike conventional one, and has original excellent flavor of soybeans like boiled soybeans.SOLUTION: A method for producing defatted soybean milk includes: A) preparing defatted soybeans by the process including a step of subjecting undamaged soybeans to protein denaturation treatment so as to lower a nitrogen dissolution index (NSI) of the soybeans to 10-60, a step of subjecting the soybeans lowered in NSI to mechanical treatment, and a step of defatting the soybeans subjected to mechanical treatment using an organic solvent, or preparing defatted soybeans prepared in the process; B) a step of preparing defatted soybean slurry by mixing the defatted soybeans with water followed by homogenization; and C) a step of supplying the homogenized liquid to a solid-liquid separator so as to separate bean-curd refuse and defatted soybean milk from each other.SELECTED DRAWING: None
