Abstract:
To provide a method for producing fried jiaozi (steam-baked meat pie) by which the crisp texture of the fried face especially the rice cracker-like film just after the frying can be maintained after a long time passage from the cooking.
The fried jiaozi is cooked by coating a coating material containing a high-amylose starch on the outer part of the pastry case of the jiaozi, and the periphery part thereof.
