To provide a method for producing frozen yoghurt having low fat, low calorie, and palate feeling of smooth feeling on the tongue like ice cream, and to provide a method for producing Western-style cake using the frozen yoghurt.
This method for producing the frozen yoghurt comprises a process of dehydrating plain yoghurt through removing 40-60 wt.% of water contained in yoghurt, a process of adding 10-50 mass% of polysaccharides based on mass of the dehydrated yoghurt, to the dehydrated yoghurt obtained by dehydrating, a process of mixing the dehydrated yoghurt with the polysaccharides, and a process of freezing the mixture of the dehydrated yoghurt and the polysaccharides. The method for producing the Western-style cake comprises using as the raw material of the Western-style cake, the frozen yoghurt obtained by the method or a thawed product obtained by thawing the frozen yoghurt.
