Abstract:

To provide a method for producing a hydrous food having excellent preservability at ordinary temperature or chilled distribution, with which the food is produced without impairing qualities.

This method for producing a hydrous food comprises using grain subjected to electron beam irradiation under conditions of 50-200 Kev electron beam energy and 0.05-150 KGy electron beam dose on the surface of the grain or grain flour obtained from the grain as a main raw material and adding water to the main raw material to prepare the hydrous food.
