Abstract:

PROBLEM TO BE SOLVED: To provide a method for producing loaf bread, in which potassium bromate being an excellent bread improving agent is used, no bromic acid remains in the baked loaf bread and the flavor and taste of the bread are never affected thereby and only home-grown wheat flour is used as raw material wheat flour.
SOLUTION: The method for producing loaf bread using only home-grown wheat flour as raw material wheat flour comprises, in a process for adding potassium bromate in preparing bread dough or its sponge and dough, adding an aqueous solution of potassium bromate so as to improve the solubility of the potassium bromate thus added in the bread dough and promote the chemical decomposition of bromic acid and further adding ferrous sulfate and ascorbic acid to thereby prevent bromic acid from remaining in the loaf bread after baking.
