Abstract:
To provide a method for industrial production of maltodextrin of DE 10-20 and having low DE, low aging tendency and low osmotic pressure.
The liquid maltodextrin having low DE, low osmotic pressure and low aging tendency is produced by heating and liquefying a starch slurry by high-temperature jet cooking at a low acidity of ≤4.0, treating the obtained liquefied liquid with α-amylase and stopping the reaction at DE 10-20.
