Abstract:

PROBLEM TO BE SOLVED: To provide a method for producing new confectionery with one mouthful size, penetrating into the vicinity of the center edible oil and fat such as chocolate showing high viscosity when being melted, and having as the main material fruits and edible flowering plants sustaining the peculiar tones of color and shapes, and also to provide confectionery obtained by the method.
SOLUTION: This method for producing confectionery is characterized by such processes that (1) the space in texture is increased through (a) impregnating fruits or edible flowering plants with one mouthful size with water under reduced pressure and/or (b) slowly freezing them, (2) the resultant product is freeze dried, (3) the resultant freeze dried product is soaked in the melt of edible oil and fat solidifying under normal temperatures but melting at 30-50°C to impregnate the edible oil and fat into the inside of the freeze dried product under reduced pressure and (4) the whole resultant product is made solid under normal temperatures. The other objective confectionery obtained by the method is also provided.
