Abstract:

PROBLEM TO BE SOLVED: To provide a method for producing a perilla juice composed solely of natural materials and stably producible in a mass through the year round by effectively utilizing a plum vinegar.
SOLUTION: The perilla juice is produced by immersing red perilla leaf in a plum vinegar, removing unnecessary plum vinegar, drying the product to obtain an extraction base, decocting the extraction base with hot water, separating the extraction base from the extracted liquid, adding sugar to the extracted liquid and filling and sealing in a vessel in hot state.
