To provide a coffee bean roasting technique for improving refreshingness of coffee taste and aromaticness each obtained at the time of extracting roasted coffee beans through improving a coffee roasting process, and to provide the use of the coffee beans for coffee beverage.
The roasted coffee beans are such ones as to be subjected to watering treatment for controlling roasting temperature in the middle of a roasting process. The method for roasting coffee beans comprises a roasting process to be performed by throwing raw material coffee beans into a roasting device (for instance, a batch type or continuous flow type device of rotating drum type or boiler type, with a heating method either of hot air type, direct fire type, heating steam type or radiant heater), and controlling roasting temperature by watering in the middle of the roasting process. The coffee beverage (as a representative, coffee beverage packaged in a hermetically sealed container and drip coffee) produced by using the roasted coffee beans or the roasted coffee beans by the method is also provided.
