Abstract:

PROBLEM TO BE SOLVED: To provide a method for producing salmon roe pickled together with red pepper which can maintain hot taste for a long period of time.
SOLUTION: The method for producing the salmon roe picked together with red pepper comprises a process including a stage for preparing a first seasoning liquid, a stage for preparing a second seasoning liquid, a stage for preparing a third seasoning liquid, a stage for preparing a tightening agent, a stage for putting 88.8 kg third seasoning liquid and 200-400 g tightening agent into a vessel, agitating the mixture, putting 100 kg raw roe into the vessel and soaking for about 3 hours and a stage for covering the prepared seasoned salmon roe with powdery red pepper and aging the same. The first seasoning liquid is prepared from 35.0 wt.% fermented seasoning, 20.0 wt.% sake, 8.0 wt.% sodium L-glutamate, 5.0 wt.% sorbitol, 3.5 wt.% common salt, 1.0 wt.% glycine, 0.2 wt.% stevia extract and 27.3 wt.% water. The second seasoning liquid is prepared from 74.0-78.0 wt.% first seasoning liquid, 15.0-19.0 wt.% sake and 5.0-9.0 wt.% soy sauce. The third seasoning liquid is prepared by putting 8.0 kg common salt, 640 g red pepper and the like into 80.0 kg second seasoning liquid and agitating and mixing them.
