Abstract:

To obtain the subject drink slight in retort odor and intense in astringency.

This canned green tea drink is obtained by the following process: the enzyme in plucked raw tea leaves is deactivated and the resultant tea leaves are subjected to a rolling operation, the tea leaves thus rolled are dried in a hot-air dryer into green tea leaves about 3 wt.% in moisture content, which are then put to extraction with 70°C hot water for the 1st decoction, subsequently the resultant used tea leaves are put to further extraction with 80°C hot water for the 2nd decoction; the green tea extract liquid thus obtained is packed at 190 g in a 200-mL can, and the can thus packed is subjected to retorting process at 121°C for 10 min.
