Abstract:
To provide a method for removing tyrosine, capable of preventing deterioration of commercial value of a fish sauce by preventing generation of white turbidness or white precipitate due to deposition of tyrosine of the fish sauce, and capable of reducing terms from fermentation needed for making a product of the fish sauce.SOLUTION: There is provided a method for removing excess tyrosine contained in a fish sauce, including adding a silica sol to the fish sauce. There is provided a method for removing excess tyrosine contained in the fish sauce, including adding silica sol to a seasoning liquid to which the fish sauce is added.SELECTED DRAWING: None
