Abstract:

PURPOSE: To smoke high-quality crabs or prawns without losing their flavor, by steaming fresh crabs or prawns immersed in a mixed solution containing seasoning, etc., keeping them at low temperature, cooking and processing them, immersing them in a mixed solution containing seasoning, etc., drying them at low temperature and smoking them by a smoking oven.

CONSTITUTION: When crabs are smoked, for example, Paralithodes camtschatica (king crabs) with thick legs are washed, immersed in a mixed solution of salt, chemical seasoning, MISO (fermented soybean paste), and water, steamed in a high-pressure steamer at high temperature, and rapidly cooled to low temperature. Bodies and legs of king crabs with tightened meat are separated, the legs are cut away from one side, the bodies are cut into a proper size and the legs and the cut bodies are cooked and processed into a desired size and shape. Then, the cooked and processed king crabs are immersed in a mixed solution consisting of refined SALE, salt, chemical seasoning, and MISO and dried at low temperature. Then, the dried matter is put in a smoking oven, smoked, redried at low temperature and coated with diluted MISO and packed into a vacuum pack. In the case of prawns, smoked prawns can be produced by a similar operation.
