Abstract:
PROBLEM TO BE SOLVED: To eliminate the drawback of acetic miocrobistatic agents having irritating smell, storing bitterness, and the like, to spoil the taste of food products, when added thereto in a large amount.
SOLUTION: The irritating smell, storing bitterness of the acetic microbistatic agents can markedly be reduced by mixing or combining a microbistatic agent for food with 1-200 pts.wt. of betaine and 1-50 pts.wt. of a taste- or pH-adjusting agent and 0-2 pts.wt. of surfactant, per 100 pts.wt. of the microbistatic agents comprising one or two or more kinds of the acetic microbistatic agents (based on 100 pts.wt. of the ingredients of a microbistatic agent, when the microbistatic agent is in a liquid form).
