Abstract:

To obtain a miso (salted and fermented soybean paste) capable of supplementing calcium especially insufficient on nutrients for Japanese by using naturally produced salt as salt among raw materials for the miso and adding calcium lactate.

This miso is obtained by using solar salt, a natural salt, as a raw material for the miso and adding calcium lactate after matured and before packed in a container or bag.
